We have been super busy harvesting our garden and preserving our crop. We are canning and freezing green beans, yellow wax beans, broccoli, cauliflower, and summer squash as well as pickling our cucumbers. Most of our zucchini has been either eaten fresh or shredded for baking. We even experimented and made mock pineapple with our zucchini last week. A delicious pineapple cake was enjoyed! Today, we made six loaves of zucchini bread!
